Correct me if Im wrong, but based on the cart-validate workflow it seems you are making sure that end users can only add items from 1 store at a time to checkout, however this is can prove to be inconvenient, is there any chance to add like a multiple cart situation where each store has its own cart and you check out from there?

The multiple cart feature is solely client-side related. There is nothing to do with it on the plugin level. You just need to have multiple carts created, one per each store a user added items from. On a checkout page you just need to complete multiple carts. This all should happen under the hood of course - hidden for end user

Is it something along the lines of having a record of carts with each key representing a store and value is the cart/ cart id
